We could always use a little sunshine in our lives. SOOOO delicious 😋 There is a full tutorial for this in my highlights, so head there to see it happen! Eating out of a pineapple just makes me happy 😆 Happy Thursday loves. This meal is Super easy, comes together in 20-ish minutes….and the sauce takes 2 minutes to whip up. I used chicken here, but feel free to sub with any protein of your liking! I used almond butter for the sauce and I love to drizzle it on EVERYTHING!⠀
Deets: 1. Heat 1 tablespoon ghee or coconut oil over medium high, add 1.5 cups chopped chicken breast, seasoned with salt and pepper, stir fry for 2 minutes. Add 1 cup chopped pineapple, stir fry for another 3 minutes. Remove and set on a bowl. 2. Add 1 more teaspoon oil then 1 cup chopped onion and 1/2 red bell pepper chopped, sauté for about 4 minutes, then add 1/2 cup chopped basil. 3. Add 3 cups cooked rice (or cauliflower rice or brown rice), mix to combine. Then add 1 tablespoon tamari soy sauce, 1 tablespoon coconut aminos, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, 1/2 teaspoon dried ginger, 1 tablespoon sriracha (or to taste), and cook for about 5-7 minutes. 4. Add 1/3 cup cashews, juice from half a lime and 1 more tablespoon of basil. Add chicken and pineapple back in. Cook for another three to four minutes. 5. Serve inside half a pineapple! SAUCE: 1/4 cup almond butter, 2 tablespoon coconut aminos, 1 tablespoon lime juice, 2 tablespoon water and sriracha to taste. Blend together until smooth.
